Bajra Vegetable Uttapam Recipe

Yes, this may sound bit beard to you. But, this recipe is for real where Uttapam is being made using Black Millet (Bajra) and vegetables. Generally, we have tasted Uttapam which are made using dosa or Idli batter. But bajra flour makes it interesting and unique. 

It also makes the dish healthier and preferable to everyone who are health consious. And its the taste which defines it perfectly. Flavour of vegetables and aroma of bajra makes the dish complete. 

Ingredients Required 
  • Black Millet (Whole Bajra) - ¼ Cup (Soaked for overnight)
  • Black Millet Flour (bajra) - 1 ¼ Cups
  • Grated Carrot - ½ Cup
  • Onion (Finely Chopped) - ½ Cup
  • Green Chillies (Finely Chopped) - 1 ½ Tsp
  • Garlic Paste (Lehsun) - 1 Tsp
  • Dhania (Finely Chopped) - ¼ Cup
  • Lemon Juice - 1 ½ tbsp
  • Turmeric Powder - ¼ Tsp
  • Chilli Powder - 1 ½ Tsp
  • Oil (For greasing and cooking) - 1 ½ Tsp
The Process to make Vegetable Bajra Uttapam

1) Take a pressure cooker and add the whole bajra with enough water and salt. Pressure cooker it until 5 whistles.
2) Let the steam released properly before opening the lid. Then remove the excess water after draining and keep it aside.
3) Time to add all other ingredients like carrot, onion, green chillies, garlic paste, lemon juice and spices together into a large bowl. Then add whole bajra and 1 ½ cup water into the bowl and mix them properly until a nice batter is ready.
4) Once the Batter is ready, the next step is to heat and grease the tava using little oil. 
5) Put a spoonful of batter at the center of the tava and spred it evenly. Make sure the Uttapam is not too thin. Cook it from both the sides until golden brown on medium flame.
6) Repeat the same steps with the remaining batter.
7) Your Vegetable Uttapam is ready. Serve hot immediately with coconut chutney / Green Chutney or any chutney of your choice.
